Place 1 and 1/2 lbs boneless, skinless chicken thighs, 1 and 1/2 lbs halved baby Yukon Gold potatoes, 1 lb carrots cut into 1-inch pieces, and 1 medium chopped yellow onion into a 6-quart slow cooker. Season with 1/2 tsp black pepper and salt to taste.
