First things first, get those potatoes ready! I usually wash them, give them a good scrub, and then quarter them if they're on the larger side, or halve them if they're smaller. We're aiming for even-sized pieces so they cook consistently. Then, chop your chicken thighs into roughly 1-inch chunks. This is where I sometimes get a little messy, chicken juice everywhere, oops! In a big bowl (the bigger the better, trust me, less mess), toss your chopped potatoes with half of the olive oil, smoked paprika, garlic powder, onion powder, and oregano. Try to keep everything in a single layer again, if possible. I've been impatient and just dumped it all on, and things didn't cook as evenly. Put it back in the oven for another 15-20 minutes, or until the chicken is cooked through and the potatoes are beautifully golden and tender.
